One of our afternoons in Portland was spent on Alberta St., a street lined with different kitschy shops, bars, and restaurants. It's a great neighborhood, and they are lucky to have one of two outlets of Bollywood Theater (the other is on SE Division St.). It's a fast casual Indian place, where they serve Indian street foods, with healthy modern twists.
Since we had a big brunch at Levant (review coming soon), we went light with their Chicken Kati Roll and an order of the special vegetable of the day, butternut squash.
These beauties were just marvelous. Succulent tandoori chicken, egg, pickled onion, cabbage, and greet chutney rolled in paratha indian flatbread - what's not to like about this? Good bread always makes the sandwich, and this one is no exception. The paratha flatbread was perfectly chewy, but hold well against all the juicy contents. It could have been spicier, but this thing was just fantastic.

This dish reminded me of an Indian Thanksgiving and it hit the spot on a rainy day. Spiced butternut squash with yogurt, pomegranate, and cilantro. Really simple dish, but all of the flavors in this really blend harmoniously. You may even think of trying this one at home ;)
